My readings indicate that historians break up the timeline different ways: using different categories or even different starting or ending dates when using the same categories.
Since my focus is on how foods and their preparations were influenced, I realized that the categories needed to put an emphasis on the two main factors I perceive as the ones with the greatest impact: people and transportation.
